I know it's possible to simulate film grain in post-production, but it never looks quite right. Besides, when I'm going for some sort of photographic effect I try to get as close to the finished result as possible in camera.
To this end, I used iso 1600 film for its more visible grain, and to really accentuate the grain I under-exposed it by two stops, then compensated for this when I scanned it. I then tweaked the image a bit in Photoshop to get exactly what I wanted. There was a bit of experimentation involved with both.
Photographed in my studio on Fujicolor 1600 negative film with studio lighting. The film was then scanned in black and white.
